Gluten intake and risk of type 2 diabetes in three large prospective cohort studies of US men and women

Zong G, et al. - This is the first prospective cohort study investigating the connection between gluten intake and long-term type 2 diabetes risk among US men and women from the Nurses’ Health Study (NHS), NHS II (NHSII) and the Health Professionals Follow-Up Study (HPFS). Among largely healthy US men and women, gluten intake was inversely related to type 2 diabetes risk. Findings revealed that limiting gluten in the diet was related to lower intake of cereal fibre and possibly other beneficial nutrients that contribute to good health. It was noted that the relationship between gluten intake and type 2 diabetes was stronger when intake of added bran was also higher.
