High red and processed meat consumption is associated with non-alcoholic fatty liver disease and insulin resistance

Zelber-Sagi S, et al. - The correlation explored herein was between meat consumption (taking into account meat type and cooking method) with non-alcoholic fatty liver disease (NAFLD) and insulin resistance (IR). Findings demonstrated that high consumption of red and/or processed meat was related to both NAFLD and IR. Additionally, high heterocyclic amines (HCA) intake was connected with IR. Data disclosed that non-alcoholic fatty liver disease served as a major public health burden and its formation appeared to be strongly associated with insulin resistance.
